Veg Box Newsletter w/c 15.10.18

Hello Folks,

In this week’s pasta, pulse and grain selections, you’ll find some cupboard essentials and maybe some items you haven’t seen before. We’ve got our Grampian (Aberdeenshire) jumbo oatsmacaroni pasta for the perfect mac & cheese (vegan recipe here), or pasta fagioli. Add potatoes, carrots or kale to use up what’s left of last week’s veg box. Many of this week’s veg boxes feature a harlequin squash from Royal Oak Farm situated just north of Liverpool. These squashes are quite versatile, but do very well roasted. Simply slice them up (skins on), drizzle with olive oil then season with salt, pepper, chilli flakes and pop in the oven until soft. Accompany with other roasted vegetables and drizzle with a tahini, lemon and maple syrup dressing (1/3 cup tahini, 1 tbsp maple syrup, juice of half a lemon and hot water to thin as desired) and serve with sauteed kale or salad.

At the Urban Croft where our Grow the Growers team are based, the last of the carrots are being pulled up this week, while the remaining bean plants were taken out last week. Everything is being covered up before winter during which the growers will still be harvesting some kale and chard. At our market garden at Left Field, the last of the cucumbers are coming out and it looks like the fennel will finish next week too making way for the winter crops.
