Hello Folks,
Westland Winter kale harvested by our fantastic growers at Left Field Market Garden features in all of this week’s veg boxes. This green curly kale is arguably the best type for making deliciously crispy kale chips. Simply wash, dry and tear the kale leaves into bite size pieces then drizzle with olive oil, salt, pepper and any spices, and massage into the leaves. Pop into the oven for around 10 minutes keeping a close eye on them until they are perfectly crispy! It goes without saying, of course, that this variety of kale is very versatile and will do well in any recipe requiring a heavier leafy green.
As well as kale, we have more goodies from our Scottish soils over at Chapel Farm. Cabbage can seem a little boring but it’s great fun as a beginner’s fermentation project. You’ll need any colour of cabbage, salt, a sterilised jar with a lid and some finger endurance! There’s a lot of recipes online where you can customise in various traditional or creative ways. Here’s a nice and clear Polish recipe. Top tip: if you’ve got any floating bits of cabbage, use one of the large outer leaves to hold them down.
